4 Easy Cookie Recipes to Make this Christmas | easy, plant-based, vegan

We look forward to Christmas cookies all year. It wouldn't be Christmas without a variety of cookies. We usually bake several kinds and love to explore and try new recipes. Today we will show you how to make an easy Almond Raspberry Thumbprint Cookie, an absolute favorite, a tried-and-true Ginger Snap Cookie, a deliciously light "Cut-Out" Sugar Cookie, and as a bonus, a delicate Spritz Cookie, all perfect for the Holiday.

My sister and I have a Christmas Cookie baking tradition. We get together and bake cookies every year, but she was not quite prepared for four in one afternoon, as you can see in the video, but we had so much fun baking and reminiscing.

So, let's start with the Almond Raspberry Thumbprint Cookie. This is one of our new favorites. It has this amazing taste and texture, rolled in crushed almonds, and finished with homemade raspberry jam; it is a true winner. Part of the magic of these wonderful cookies is the chewy, delicious center. Finish these cookies with a drizzle of icing for an extra special look, though we usually skip this step. What can I say? We love them as they are.

Ginger Snap Cookies are old favorites. They are chewy on-the-inside and crunchy on-the-outside — a traditional and wonderful Christmas Cookie in our home. They are also super festive. Stack and wrap with a festive ribbon, and they are perfect for gifts.

And who can make do without the traditional sugar cookie for Christmas? We need a variety of them in different shapes and sizes. It is such a fun and festive recipe to make with the family as it will challenge everyone to be creative and involved in Holiday baking.

Our bonus recipe for today is Spritz cookies. They are sugar cookies, shaped with a cookie press, instead of sugar cookies shaped with cookie cutters. The recipe is slightly different. We make Spritz cookies every year. The Cookie Press does the shaping for you, and they look so beautiful. Tie a red ribbon around them, and you have a stunning presentation or a wonderful gift.
