Red Chicken Karahi:
Ingredients:
Chicken 750 gm
Yogurt ½ cup
Clarified butter 1 cup
Ginger Garlic (crushed) 2 tbsp
Talhar Mirch (chopped) 10-12
Curry Leaves 10-12
Whole all spice 1 tbsp
Tomatoes 4
Talhar Mirch Powder 1tbsp
Ginger Garlic Paste 1tbsp
Lemon Juice 2 tbsp
Onion (chopped) 2
Cashew nuts 10-12
Salt to taste
In a chicken add yogurt and leave it.
Now heat ghee add onion and fry.
Then add curry leaves, whole garam masala and fry.
Then add chicken, tomatoes, ginger garlic paste, salt, talhar mirch and fry well.
After this, add ½ cup of water and cook until chicken is done.
Now fry well add lemon juice, and take it out in a dish.
Then heat ghee talhar mirch, ginger garlic nad fry.
In the end, add curry leaves, cashew nuts and little fry.
Add cooked chicken and serve.
Masala Daal Mash Fry:
Ingredients:
Split Bengal gram (boiled) ½ cup
White lentil (boiled) 1-1/2 cup
Tomatoes (boiled & cut) 3-4
Red chili powder 1-1/2 tsp
Turmeric ½ tsp
Salt to taste
Ginger garlic paste 1 tbsp
Mix whole all spice 1 tbsp
All spice powder ½ tsp
Butter 4 tbsp
Clarified butter ½ cup
Asafoetida 2 pinch
Ginger (finely cut) as required
Green chilies as required
Green coriander as required
Mint as required
Fry onion as required
Method
Heat butter and oil add whole all spice, ginger garlic paste, boiled tomatoes, salt, red chili powder and turmeric and sauté gravy. Now add white lentil, split Bengal gram and 1 cup of water and let it cook. When lentil and gravy get mix well then add asafetida, all spice powder, little ginger and green chilies and let it simmer. Now take out in dish and garnish with green coriander, green chilies, ginger and fry onion.
Bajray Ki khajoorian:
Ingredients:
Flour ¾ cup
Millet flour 1 cup
Clarified butter ½ cup
Sugar ¾ cup
Oil for frying
Desiccated Coconut 4 tbsp
Milk 1 cup
Soda 2 pinch
Cardamom Powder ½ tsp
White Sesame Seeds 2 tbsp
Method:
Heat oil and all ingredients mix well and knead .now make small dates and fry on low heat.
