GLUTEN-FREE TEA CAKE
INGREDIENTS:
Eggs – 2
Egg yolk – 1
Sugar – ½ cup
Milk – 1/3 cup
Vegetable oil – 1/3 cup
Vanilla extract – 1 tsp
Yellow food colour – a few drops
Gluten-free flour – 1 & ½ cup (I used a combination of rice flour, maize starch and tapioca starch)
Salt – ½ tsp
Baking powder – ½ tbsp
SUGAR SYRUP:
Water – 1 cup
Raw or white Sugar – ½ cup
NOTES:
~ keep the cake covered in cling wrap to avoid drying out.
~Tea cakes are not very sweet usually, so use the sugar syrup according to the sweetness you desire.
~Baking times may vary according to the oven type, insert a toothpick to check if it is baked well. (it should come out clean)
~You can also use LACTOSE-FREE milk in this recipe if you are intolerant
