Rasmalai Recipe
Ingredients:-
For Chenna Balls
Cow Milk - 2 litres
Vinegar- 30ml
Ice cubes - 2 cups
Sugar - 200g
Water- 2.5 litres
Method:-
In a large pot boil cow milk, curdle the milk with vinegar, as soon as milk solids seperate & add ice cubes.
Strain it using a muslin cloth & collect milk solids.
Squeeze out the excess water & knead it for 5 minutes into a smooth thick paste. Divide the balls into 7- 10 g balls & keep aside.
In a large pot boil water along with sugar. Poach the balls for 15- 18 minutes on high heats. Then after transfer into chilled water. Squeeze the moisture out & add to chilled sweet milk
Sweet Milk:
Milk - 750ml
Sugar - 120g
Cardamom- 5(powdered)
Saffron- Pinch
Pistachios- few
Rose petals- For Garnish
Method:
Boil milk & add sugar & saffron, once it comes to vigorous boiling add cardamom powder & let it cool completely. Chill the milk & add chenna balls.
Chill the Rasmalai for 6 hours or overnight.
Garnish with Pistachios & Rose Petals
