📋 Ingredients (simplified):
For the Rice:
2 cups basmati rice (soaked 30 mins)
4 cups water
Salt to taste
2 green cardamom
1 bay leaf
2 cloves
For the Chicken/Mutton:
500g chicken or mutton
½ cup yogurt
1 tbsp ginger-garlic paste
1 tsp red chili powder
½ tsp turmeric
½ tsp garam masala
Salt to taste
Juice of ½ lemon
For Garnish:
1 onion (sliced & fried)
2 tbsp chopped mint + coriander
1 tbsp ghee or oil
A pinch of saffron in 2 tbsp warm milk (optional)
✅ Step 1: Marinate the Meat (10 mins)
Mix meat with yogurt, spices, ginger-garlic paste, lemon juice.
Let it marinate while you prep rice. (If time allows, 1 hour is better.)
✅ Step 2: Cook the Rice (10 mins)
Boil water with salt & whole spices.
Add soaked rice and cook till 70% done (grains should break with a bite).
Drain and keep aside.
✅ Step 3: Fry Onions (5 mins)
Thinly slice 1 onion.
Fry till golden brown and crispy. Keep some aside for garnish.
✅ Step 4: Assemble Biryani Layers (5 mins)
In a heavy pan:
1. Add the marinated meat at the bottom.
2. Add half the rice.
3. Add some fried onions, mint, coriander, saffron milk (optional).
4. Add rest of the rice. Top with remaining garnish + 1 tbsp ghee.✅ Step 5: Dum Cooking (25–30 mins)
Seal the lid (or cover tightly).
Cook on medium for 5 mins, then low flame for 25 mins.
Let it rest 5 mins before opening.
✅ Step 6: Serve & Enjoy! (2 mins)
Gently fluff the biryani.
Serve hot with raita or salad.
