Welcome to the smoky side of heaven, where fat is flavor, and pork belly bites are the undisputed kings of backyard snacking. In this video, we're taking thick, juicy chunks of pork belly (aka bacon’s juicier, fancier cousin) and transforming them into crispy, sticky, smoky nuggets of joy.
Also known as “meat candy” by BBQ fanatics across the internet, these little squares of glory get seasoned, slow-smoked to tender perfection, then bathed in a sticky glaze that’ll have your taste buds writing love songs.
We’re talking smoke rings, crispy edges, and that melt-in-your-mouth center that’ll make you question every life decision that didn’t involve pork. Whether you're tailgating, showing off at your next BBQ, or just trying to win friends without having to talk to them, these bites are the winning move.
No matter what you call them, "bacon nuggets," "oink cubes" or "hog gold", you need to cancel your salad plans and prepare your arteries, because once you try smoked pork belly bites you'll never go back to tofu again.
Recipe:
Ingredients
Pork Belly
BBQ Rub of choice
Butter
Pork Belly Bite Sauce (good for about 5lbs of pork)
¼ cup Ketchup
¼ cup bbq sauce
½ cup brown sugar
⅛ cup Apple Cider Vinegar
2 Tbsp BBQ Rub
Instructions
Cut belly into approx 1 to 1.5 inch cubes.
Toss in you rub of choice.
Smoke the cubes on a rack at 225 for 3-4 hours. When the bark is where you want it pull them off the smoker.
Transfer to an aluminium pan and add the butter and sauce.
Cover the pan with foil and seal it up tight.
Throw it back on the smoker.
Check the temp of your bites ends after an hour or so. You want the temp to get up to about 195 degrees. If you're there, great!
Let the pork belly cook uncovered for an additional 15 minutes. This will crisp up some of the pork belly cubes, and give it that tacky finish you're looking for.
