Why Mesh Grease Filters Are Illegal in Kitchens (NFPA 96 Explained)

According to NFPA 96 (2021 Edition), specifically section 6.2.3.2, mesh filters are explicitly prohibited due to their inherent fire hazard. These filters were popular decades ago, primarily because they were inexpensive and readily available. However, history has shown they significantly increase fire risk due to rapid grease buildup and difficulty of proper cleaning.
Today’s industry standards require UL-listed baffle-style filters or equivalent approved grease removal devices. These newer filters offer better airflow, improved grease extraction, and easier cleaning, dramatically reducing fire risk and ensuring compliance.
