Chocolate Fudge Cookies Recipe
Ingredients:
200g Biscuits (animal crackers: 3.5-4cups or Maria biscuits: 1 packet)
500g Powdered Sugar (4 cups)
2 sticks + 2 Tbsp Butter (250g)
3 Tbsp Cocoa powder
Pinch of Salt
1 Egg
1 tsp Vanilla extract
50g Milk chocolate (optional)
3 Tbsp Chocolate sprinkles (optional)
Smash the biscuits into equal size pieces by placing it in a zip-tie plastic bag and rolling over it with a rolling pin. Mix together the sugar, cocoa powder, and salt. Beat the egg and add the vanilla to it. Melt the butter in the microwave, and add the optional chocolate to it and microwave some more until it melts as well – roughly 40 seconds. Add the butter/chocolate and vanilla/egg to the powdered sugar/cocoa and mix together while the butter is still hot. The heat of the butter/chocolate helps to temper the egg, making it safe to eat. (Just be careful it’s not too hot otherwise you could risk curdling the egg). Mix it vigorously until silky smooth and lastly add the crackers and mix well. Spread it out onto parchment paper, about an inch thick and top with sprinkles. Let it cool in the fridge for 30min. Cut into desired shapes. ENJOY!! Store in an airtight container in the fridge and enjoy within 7 days.
