INGREDIENTS:
Empanadas
3 hot Italian sausages
1 medium red potato
Empanada dough
Canola oil
Sauce
Mayonnaise
Chipotle pepper in adobo sauce
Salt & pepper

DIRECTIONS:
Peel and dice potato into ¼-inch cubes
Case sausage casing and chop into small pieces
Boil the potatoes for about 4 minutes in salted water
Heat 2 tablespoons of canola oil
Add sausage and sauté for about 4 minutes or until fully cooked
Break sausage pieces into smaller bits
Transfer and mix potatoes with sausages for about 1 minute
Remove from heat and let them cool
Add 1 tablespoon of sausage and potato mix into the empanada dough
Fold dough in half and seal it with a fork
Heat 1/4 cup canola oil on medium high
Add empanadas and fry for about 2 minutes on each side until golden brown
Transfer to platter and drizzle sauce over empanadas
Sauce
Smash 1 chipotle in adobo sauce
Add ¼ cup mayonnaise (or plain yogurt)
Mix well
Add salt & pepper to taste
