The basis of ketchup is tomatoes, which are first ground to obtain a homogeneous mass. This process is crucial, because the quality of grinding determines the texture, thickness, and taste of the final product. Other ingredients, such as sugar, vinegar, salt, spices, and preservatives (in some cases), are added to the ground tomato mass. All of those are thoroughly mixed, heated, and run through the pasteurization and prepackaging stages. However, more often than not, it is the grinding stage that causes process-related difficulties.
