Sauerkraut is a classic side dish traditionally served with dishes like Eisbein, sausages, roasted duck, and more. In this video, I've employed organic red cabbage to create two distinct ferments: one using a dry salting method for sauerkraut and the other utilizing a salt brine for regular fermentation.
