Libyan Shakshooka, poached eggs in sauce.
Ingredients:
1 small onion-chopped
3 cloves of garlic-diced
fresh parsley-chopped
1 fresh tomato-chopped
2 spoons of tomato paste
1 teaspoon cayenne pepper (or to taste)
1/2 teaspoon tumeric
1 1/2 teaspoons salt
1/2 -1 teaspoon dried crushed mint
4 eggs
1/4 cup or less of Orzo
approximately 4 - 5 cups of hot water
olive oil
