Homemade burrata
Mama was over the moon to welcome our new friend Rodolfo @amanocheese to the farm for a special day of making homemade burrata. Rodolfo is a true Neapolitan, and having him share his passion and expertise for crafting real Neapolitan burrata was such a gift. Mama had never made burrata before, and getting to learn from him, right in our own kitchen, meant the world to her 🥰
To celebrate, they prepared a fresh summer salad to truly showcase the star of the show: that creamy, delicate burrata they had just made together. Cherry tomatoes, crisp cucumber, peppery arugula, and fragrant basil—all dressed simply in olive oil and balsamic—made the perfect base. But it was that burrata, made with so much joy and care, that brought the whole dish to life.
Seeing Mama this happy, laughing and learning something new, absolutely filled my heart. These are the moments we’ll never forget 😩🥰
Summer Salad with Fresh Burrata
Ingredients:
• 1/4 red onion, julienned
• 1 cup mixed cherry tomatoes, halved
• 1/2 cup baby arugula
• 1 cucumber, thinly sliced
• 3 tbsp extra virgin olive oil
• 1 tbsp Modena balsamic vinegar
• 10 fresh basil leaves
• Salt and freshly ground black pepper, to taste
• 1 ball fresh burrata
• 2 slices toasted homemade bread
Instructions:
In a bowl, toss cherry tomatoes, red onion, cucumber, and arugula with olive oil, balsamic vinegar, salt, and pepper. Transfer to a serving dish, add torn basil leaves, and place burrata on top. Slice open the burrata and drizzle with olive oil, salt, and pepper. Serve with toasted bread on the side.
