Today we cooked a slow-roasted lamb leg in a traditional clay tandoor oven here in our small Afghan village in Bamyan.
This is one of the oldest ways of cooking meat in the countryside, using hot coals, firewood, and natural flavors. Our family prepared the lamb leg together, seasoned it simply, and placed it under hot ash and burning coals the village way.
While the lamb was cooking slowly, we enjoyed the fresh mountain air, the peaceful countryside, and the quiet life of our sheep and goats around us. This style of village cooking is part of our daily life in the mountains of Afghanistan, where traditional recipes, homemade bread, and family gatherings are still a big part of living.
