Today we made FAT TOP  a childhood favorite of ours, and I bet it's also the favorite of many of you guys growing up. Fat top, or corn pone, as some of you might know it, is a traditional Guyanese dessert that many of us know and love from growing up.
We have an easy and simple recipe that we'll love to share with you guys, so go ahead and give the recipe a try, and if you do, let us know how it turns out for you. Enjoy!

Ingredients:
For the cornmeal layer:
1 1/3 cup brown sugar
2 cup fine grain cornmeal
1 1/2 tsp. freshly ground nutmeg
1 tsp. ground cardamom or elychee
1 tsp. freshly ground ginger
4 tbsp. freshly grated coconut
2 cups fresh homemade coconut milk
1 tbsp. vanilla extract

For the top layer (or the FAT)
1 1/2 cup fresh homemade coconut milk
1/3 cup brown sugar
