Ingredients:
500g mixed pork and beef mince
1/2 large onion, chopped into medium-sized chunks
60g bacon bits
1 stale German breadroll
1 bunch of parsley, finely chopped
1 tablespoon spicy mustard
Salt and pepper, to taste
1 egg
3 hard-boiled eggs
Instructions:
Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
Start by preparing the breadroll. Dunk the roll in a bowl of water and let it soak for a minute or two. Once the bread is fully soaked, gently squeeze out the excess water and set it aside.
In a large mixing bowl, combine the mixed pork and beef mince, chopped onion, bacon bits, parsley, mustard, salt, pepper, and egg. Mix everything together until fully combined.
Take the breadroll and tear it into small pieces. Add it to the mixing bowl and use your hands to knead everything together until the mixture comes together and feels slightly greasy.
Take half of the meat mixture and shape it into an oblong shape on the prepared baking sheet. Arrange the hard-boiled eggs in a straight line down the center of the meat, leaving some space between them.
Cover the eggs with the remaining meat mixture, making sure to press it down firmly to eliminate any air pockets.
Place the meatloaf in the preheated oven and bake for 45 minutes, or until fully cooked and browned on the outside.
Remove from the oven and let the meatloaf cool for a few minutes. Cut it into thick slices and serve with your favorite sides, such as potatoes and peas.
