Coconut Butter Mochi Recipe, Planting My First Tree, Hawaii Farmers Market Finds

Hi Everyone!
Hope you're having a wonderful January! Here's to the first VLOG of 2024.

Butter Mochi Recipe:
1 16 oz box mochiko https://amzn.to/48JkuUJ
2 C. sugar
1 1/2 tsp salt
1 T. baking powder
1 14 oz can coconut milk https://amzn.to/3OgOgs1
1 12 oz can evaporated milk https://amzn.to/42c7Nzx
2 eggs
1 stick unsalted butter, melted (1/2 cup)
1/2 cup shredded coconut https://amzn.to/3OhN6wq

Preheat oven to 350 degrees F.
Mix dry ingredients together and then add in wet ingredients and mix until well combined.
Pour into a greased 9×13" baking pan and sprinkle shredded coconut on top and bake for an hour or until a golden brown crust has formed
Let cool and slice into rectangles, and enjoy! Use a plastic knife when cutting!
