I found it nearly impossible to find a cracker at the store I could eat during my elimination diet. The gluten free crackers still had eggs, soy, corn or some other odd ingredient that may it non viable with my diet. So instead of giving up snacking I decided to make my own crackers.
These simple 3 ingredient crackers have a wonderful crunch and are a great addition for any snacking occasion. They have zero allergens (unless you are allergic to olives, then substitute oil accordingly). They have surprisingly good flavor and store well for weeks.
You can blend your own rough flour (we liked the texture of these crackers the best) or buy rice flour for a smoother texture. I recommend buying at your local asian market to get the best deal. Typical grocers and online retailers are capitalizing on the gluten free market and charge 3x+ the cost of the asian markets.
