Coconut milk rice as known as Kiribath is a traditional Sri Lankan dish made from rice and coconut milk. It is commonly served for breakfast.

I used coconut milk powder for this recipe. If you don't have coconut milk powder, you can use canned coconut milk or coconut cream.

This can be served with lunu miris, seeni sambol or you can eat with ripe banana.

Seeni sambol:    • Seeni sambol | Caramelized onion chutney |...  

Ingredients to cook the rice
2 cups basmati rice (500g)
4 ½ cups water (1125ml)

Ingredients for the coconut milk mixture
9 tablespoons coconut milk powder (180g)
2 ½ - 3 cups hot water (625ml-750ml water)
2 teaspoons salt (to taste)

Method
Add rice to a bowl and fill with enough room temperature water to completely submerge. Using your hand, gently swirl the rice around to rinse. Pour off the starchy water as often as needed until the water runs nearly clear. Drain the rice in a fine-mesh strainer.
Add rice to a saucepan or pot and pour in water. Cover and cook over medium heat until the rice is fully cooked.
Whilst waiting for the rice to cook, dissolve coconut milk powder in hot water.
Dissolve salt in coconut milk mixture.
Once the rice is fully cooked, turn the heat to medium-low heat. Add coconut milk mixture to the cooked rice and mix well. Stir constantly.
Once the coconut milk is fully absorbed, the rice will become a little sticky and thicker.
Turn off the stove, pour it in a dish. Flatten it thick and smooth out the surface of the milk rice with the back of a flat spoon or a spatula.
Let it cool down completely.
Once it's set, cut it into a diamond shape or square pieces.
Serve with lunu miris or seeni sambol.
Enjoy!!!

Notes:
You can use any raw rice (kekulu or jasmine), but not par-boiled rice.
Amount of water to cook the rice may differ from the type of rice you are using. This applies to the water to make the coconut milk mixture. I will recommend you start with 2 ½ cups of milk mixture to begin with.
I have use 3 tablespoons of coconut milk powder for 1 cup of water. You can use 2 tablespoons if you want less coconut flavour.
