Use these stuffed peppers as a wonderful side dish or even as an appetizer. They are so easy to prepare and so delicious .Take it up a notch and add some anchovies into the breadcrumb mixture ! Check out my Mothers Stuffed Pepper Recipe with Eggs and Marinara Sauce , its very delicious!

Ingredients:
6-10 Thin Peppers
2 Cups Seasoned Bread Crumbs - (I used 4C )
1 Cup Plain Panko ( total of 3 Cups of Breadcrumbs )
1 Tablespoon Chopped Parsley
1 Medium Size Shallot
5-6 Clovers Crushed Garlic
Sea Salt
Cracked Black Pepper
Freshly Grated Parmesan Cheese
Lots of Good Olive Oil
Bake 375 Degree Oven for 30-40 mins until tops are golden brown ,peppers are soft and the bottom of the peppers are roasted
