This is a spicy, crunchy biscuit or cookie, popular in Holland and Belgium. It has a lovely mix of spices and is traditionally enjoyed at this time of year. Traditionally made in speculaas moulds I used cookie cutters for mine. I think they go well with tea, the lovely crunch and the subtle flavour of the spices builds as you eat the cookie.
