材料 ingredients :
640g 半隻新鮮雞
fresh half chicken
70g 薑片 ginger slices
40g 青葱 green onion
調味 seasonings :
250ml 味醂 mirin
250ml 魚露 fish sauce
60ml 檸檬汁 lemon juice
4 tbs 蜜糖 honey
250ml 清水 water
做法 procedures :
1. 用滾水燙燙雞,再用水喉凍水沖洗至涼,隔去水份, 剪去多餘脂肪
pour hot boiling water on the chicken. Rinse with cold tap water till it feels cold. Drain the water. Cut off excessive fat.
2. 在鍋底放下薑和青葱,加入調味,放上雞,雞皮向上
put ginger n green onion at bottom of the pot. Add seasonings. Place chicken in, with skin facing upward.
3. 蓋好大火煮滾,滾起再煑8分鐘
cover n bring to boil on high heat. Once boiling, keep boiling on high heat for 8 more mins
4. 熄火,留在爐上燜30分鐘,中途反一反
turn off heat. Stay on stove n simmer for 30 mins. Flip it midway through.
5. 取出放涼,放涼後斬件,放在生菜上, 淋上湯汁便成
take it out to cool down. After cooling down, cut up n place on lettuce. Pour on some soup n serve.
