Ingredients:
2 tablespoons (30g) unsalted butter
soaked onion or leek 100 g
2 large carrots, peeled and sliced
1 lb (450g) fresh salmon fillets (skinless), cut into bite-sized pieces
1 lb (450g) baby potatoes, quartered
1 cup (250ml) heavy cream/double cream (or coconut milk)
1 bay leaf
Pinch of allspice
Salt and pepper, to taste
1/2 lemon, juiced (optional)
Instructions:
Melt the butter: In a large saucepan, melt the butter over medium heat.
Prepare the vegetables: Add chopped onions and carrots to the pan. Sauté until vegetables are soft, about 5 minutes.
Add potatoes and water or broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10 to 15 minutes.
Add the salmon: Add small pieces of salmon to the pan and cook until the salmon is cooked through, about 5 minutes.
Add coconut milk and spices. Add coconut milk (or heavy cream)
Finish with the herbs and lemon (if using)
Garnish and serve: Ladle soup into bowls and garnish with fresh shallots or dill
