Vegan Flan Caramel | GF


Makes 8 small flans (the size of small coffee cups)


This recipe is a winner & never fails to impress. What people might not guess, is that it’s SUPER easy to make!


Caramel Ingredients:

150g Sugar
60ml Water

Flan Ingredients:

500ml Unsweetened Soya Drink.
80g Sugar.
40g Cornflour.
The peel of 1 Lemon.
1 Small Cinnamon Stick (3cm).
1 1/8th tsp Turmeric powder.
1 tsp Vanilla Essence.


Method:

Caramel…

Add sugar & water to a small pan.
Heat on medium setting.
Do not stir.
Set your moulds by the caramel, ready for decanting.
After about 10mins, the sugar will begin to take on its caramel colour.
Be careful not to burn the caramel, if you used white sugar, it should be a rich, golden colour.
Once ready, distribute the caramel into the moulds. It is important that this is done quickly & carefully
as the caramel will begin to set straight away now that it’s been removed from the heat.

Flan…

Add all of the remaining ingredients to a medium sized pan, apart from the vanilla. Heat on medium.
The mixture will begin to thicken. Once it boils, remove the lemon peel & cinnamon stick.
Add the vanilla extract & stir in well.
Pour the mixture into the moulds on top of the caramel.
Set aside to completely cool.
Now cool, cover and place them in the fridge for a minimum of 3 hours, but preferably over night.
