Recipe :
Levain:
25G starter
25G Rye flour
25G Water
Dough :
100G Rye flour
100G boiling water
mix and let it rest for 3 to 4 hours
To that add:
250G Rye Flour
50G Wheat Germ
70G Levain
300G water
tsp honey
7G salt
Fermentation time at 25c 4 hours .
Proofing time 1 Hour.
Bake at 230c 20 min with lid
remove the lid bake for another 25 to 30 min at 215c.
