Today I’m excited to share this cozy and wholesome Carrot Walnut Loaf Cake recipe with you! It’s moist, warmly spiced, and packed with sweet carrots and crunchy walnuts, perfect for an afternoon treat or a weekend breakfast. Let’s get started! 🥕🍰
Ingredients (Carrot Walnut Loaf Cake):
2 large eggs, at room temperature
1/2 tsp vanilla
60 g granulated sugar (1/3 cup)
60 g brown sugar (1/3 cup)
110 ml vegetable or sunflower oil (about 1/2 cup)
230 g carrots, grated or shredded (about 2 cups)
190 g all-purpose flour (1 1/2 cups)
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
60 g walnuts, chopped (1/2 cup)
Loaf Pan Size: 22 x 13 x 7 cm (9 x 5 inch)
⏱️ Baking Time: 45–50 minutes at 350°F (180°C) in a preheated oven
🧁 Prepare the Batter:
In a large bowl, whisk together 2 large eggs, 1/2 tsp vanilla, and both sugars (60 g granulated + 60 g brown) until pale and creamy.
Add 110 ml oil and mix until smooth.
Stir in 230 g grated carrots and mix gently.
Sift together 190 g flour, 1 tsp baking powder, 1/4 tsp baking soda, 1/4 tsp salt, and 1 tsp cinnamon.
Gradually add the dry ingredients to the wet mixture, stirring on low speed until just combined.
Fold in 60 g chopped walnuts.
🔥 Bake the Cake:
Preheat your oven to 350°F (180°C).
Grease or line a 9 x 5 inch loaf pan with parchment paper.
Pour the batter into the prepared pan and spread it evenly.
Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
Once baked, let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
