One of the best things I ever did for myself was NOT WAIT until the New Year to work on my resolutions. I can also tell you that not much has changed in terms of What I Eat in A Day since having lost over 40 pounds and managing to keep it off through a Paleo approach to life. Because I now develop recipes for a living, there’s a bit more variety in terms of what I cook and eat, but here’s what stays the same: I try to load up on things that are nutrient-dense, delicious and filling. As a new dad, I’ve also started focusing on foods and recipes that are easier because, well, time passes a lot quicker these days. Incorporating Epic Provisions bars is one of the ways that helps me save time, while ticking all of the above boxes

Breakfast Western Omelet
:
3 strips sugar-free bacon, sliced in half
5-6 button mushrooms, diced
¼ cup diced zucchini, diced
1/8 cup red bell pepper, diced
1/8 cup green bell pepper, diced
1/8 cup onion, diced
½ jalapeño, diced
1 teaspoon ghee
3 eggs, whisked
½ avocado, sliced
Post-Workout Meal:
1 banana
1 cup baby spinach
1 tablespoon almond butter
1 cup frozen mango
1 cup almond milk
(Blend the above together to make a smoothie)
1 EPIC Provisions Meat Bar, such as Venison Sea Salt and Pepper
Lunch Salad:
1 chicken breast, sliced in half, lengthwise
kosher salt and freshly-cracked black pepper
spicy smoked paprika
1 tablespoon avocado oil
2 big handfuls mixed leafy greens
1/2 cup cherry tomatoes, sliced in half
¼ red bell pepper, julienned
¼ green bell pepper, julienned
¼ cup sliced English cucumber
¼ small onion, thinly sliced
¼ cup sliced Kalamata olives
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
Snack:
Espresso or cup of black coffee
Small handful roasted almonds
3-4 slices prosciutto or jamon serrano
5-6 olives

Nightly Tea:
1 cup herbal tea
1 to 2 spoons almond butter
Throughout the Day:
Lots of water!!!
