In today's video we're making a Russian style Caviar. Caviar is a type of fish roe, usually served as an appetizer or a snack. Caviar is the roe of the Acipenser sturio sturio, Acipenser gueldenstaedtii, Acipenser brevirostrum and Acipenser nudiventris, sturgeon species. The roe is mostly sold salted and is best served at room temperature or chilled. The best ones are from the Caspian Sea and Black Sea. The roe is sold as a paste and is sometimes pressed into tinned discs.
