These yam balls or croquettes are likely to be the best you've ever tried. I love to make them and serve as part of my buffet spread. It is perfect as hors d'oeuvre (very classy) or as part of your entree. We love to just snack on them... cold or warm with some rainbow or green chilli sauce. Once you try it, you may just not be able to stop. The crispy panco breadcrumbs is the perfect coating for this. So crunchy on the outside but soft, smooth and buttery on in when you bite into it. Try it! 😋.
Ingredients:
1.5 lb yams
0.4 lb sweet peppers
½ medium onion
0.3 lb corned beef
⅓ teaspoon white pepper
½ teaspoon salt or to taste
2 eggs
Oil for deep frying
optional:
I normally add butter and that makes your yam balls richer in texture and taste.
