From ʻĀina to Mea ʻAi: Pickled Daikon

Join our Kupa ʻAina Farm Manager, Anthony Deluze, as he teaches us how to make pickled daikon from Kupa ʻAina-grown purple, red, and white daikon.
Recipe:
10lbs. Daikon (washed and peeled, include daikon leaves and stems)
6 cups organic cane sugar*
1/2 cup of Paʻakai (coarse Hawaiian sea salt)
2 cups Apple Cider Vinegar*
*Measurements for sugar and vinegar are to your liking and taste preference.
1. Cut daikon and daikon greens into bite sized pieces.
2. Combine daikon, sugar, paʻakai, and ACV in a big bowl.
3. Let flavors combine overnight before sealing in an airtight container.
Enjoy on top of hot rice, as a side dish, or as a delicious snack!
