INGREDIENTS:
½ cup long grain rice
1 pound ground beef
1 tablespoon butter
3 eggs
Kosher salt and black pepper
Ketchup

COOKING METHOD:
1. Add the rice to a small saucepan and rinse under cold water, draining and repeating the rinse several times until the water runs clear. Cover the water with 1 inch of water and let it soak for 15 minutes. After 15 minutes, drain the water and add ¾ cup of water over top. Season the rice with salt, cover with a lid and bring to a boil. Once boiling, reduce the heat to low and cook for 15 minutes. After 15 minutes, remove it from the heat and let it sit, with the lid on, for another 15 minutes.
2. While the rice is cooking, brown the beef.
3. In a medium skillet over medium high heat, add the oil. Once the oil is shimmering, add the beef and season with salt and pepper. Break the beef up with a wooden spoon into small pieces. Cook for 8-10 minutes, or until the beef is golden brown and cooked through completely. Remove from the heat and set aside.
4. In a small mixing bowl, add the eggs and a generous pinch of salt. Whisk for 1 minute, or until the eggs are homogenous.
5. In a small skillet over medium low heat, add the butter. Once the butter begins to sizzle, add the eggs and immediately stir with a rubber spatula. Continuously stir until the eggs are 80% cooked. Remove from the heat and set aside.
6. Add the rice to a bowl and top with reserved beef and eggs.
