Golden skewers of summer — juicy chicken and tender monkfish, grilled to perfection, brushed with aromatic curry, and served over saffron rice.
The secret? A silky yogurt sauce infused with honey, paprika, and garlic for that irresistible balance of heat and sweetness.
Grill at high heat — around 600°F — and let the magic happen.

Ingredients
Skewers:
• 1 Monkfish filet (6–8 oz)
• 1 Chicken breast
• 1 Red Bell Pepper
• 1 Green Bell Pepper
• 1 Onion
• 2 Tbsp Curry powder
• Olive oil, Salt & Pepper
Curried Yogurt Sauce:
• 8–10 oz Yogurt
• 2 cloves Garlic (chopped)
• 1 Tbsp Honey
• 1 tsp Smoked Paprika
• 1.5 tsp Curry powder
• Salt to taste
Side:
• Saffron rice
Grill Time:
🔥 Heat grill to 600°F.
• Grill chicken skewers ~4 min per side.
• Grill monkfish skewers ~2 min per side.
• Serve over saffron rice with warm curried yogurt sauce.
