Have you ever tried scallops in sushi that are not raw?
In this video, I'm introducing how to make simmered scallop sushi!
Scallops are amazing raw, but when simmered gently, their sweetness deepens and pairs beautifully with sushi rice and a thick sweet sauce called "Tsume". It’s a perfect balance of flavors!
This recipe was inspired by two fantastic sushi restaurants in Tokyo:
① Sushi Shin (Nishiazabu)
→14 years in a row with one Michelin star!
The main idea I borrowed from them is soaking the scallops in a broth heated to 80°C and letting them rest for a day. This method was introduced in a cookbook.
② Matsusushi (Yanaka)
→A historic sushi restaurant with nearly 80 years of history!
I mainly referenced their simmering sauce recipe. I slightly adjusted the sugar to better suit my own taste. The original recipe was shared in one of their YouTube videos.
