Lemon and Poppy Seed Muffins
Makes 12 Muffins
For the Muffins:
250g/ 1½ cups of All-purpose flour
2 teaspoons of baking powder
¼ teaspoon baking soda
2 tablespoons poppy seeds
160g/ ¾ cup sugar
2 tablespoons lemon zest
165g/ ½ cup greek yogurt
4 tablespoons of milk
85g/ ⅜ cup unsalted butter melted
2 large eggs
1 tablespoon lemon juice
1 teaspoon vanilla extract/almond extract
A pinch of salt
For the Glaze:
85g/ ⅔ cup powdered sugar
2 tablespoons lemon juice
3-5 tablespoons of water (depending on what consistency you like)
Method
Preheat oven to 220 °C/425°F.
Line a 12-cup muffin pan with paper liners.
For muffins:
In a large mixing bowl, sift together flour, baking powder, and baking soda. Whisk in poppy seeds and salt.
In another large mixing bowl, combine sugar and lemon zest. Rub zest into sugar until fully combined.
Add yogurt, milk, melted butter, eggs, lemon juice, and vanilla/almond essence. Whisk until smooth.
Pour the dry ingredients into the wet mixture in batches and whisk until combined. The batter will become thick- switch to a spatula and continue folding until smooth.
Divide batter evenly among paper liners (weigh the batter if you need to).
Bake for 15 to 20 minutes or until tops are golden brown.
Let muffins cool completely.
For glaze: In a small bowl, use a small spoon to whisk together powdered sugar and lemon juice until smooth. Add a tablespoon of water at a time until you get to your desired consistency.
Drizzle over cooled muffins.
