How To Make Trinidad Smoked Herring Recipe

For this recipe you'll need:
16 Smoked herring fillets (2lbs)
3 Scallions
2 cloves garlic
1 Large Onion
2 Bell Peppers (small, any color)
1 Habenero pepper (any pepper you like)
2 Tablespoons Maggi Fish seasoning
1 Tablespoon All purpose seasoning
1/2 Tablespoon Seasoned salt (season to taste with more or less)
1/4 Teaspoon black pepper
4 Tablespoon vegetable oil
3-4 sprigs thyme
1 large tomato or 1lb grape tomatoes (Approx 8)
Method for Smoked Herring:
1. Place the smoked herring fillets in a pot of boiling water boil the smoked herring fillets till tender (excess oil will rise to the top indicating that it's ready), when the smoked herring gets warm go ahead and clean the smoked herring and strip the smoked herring
2. Heat 1/2 the amount of oil on med heat. (2Tbps)
3. Add the Onions to the pot and cook for 1 1/2 minute
4. Add the garlic to the pot and cook for another 1 minute
5. Add the bell peppers and cook for another 1 minute
6. Add the 4 sprigs of thyme and mix well
7. Add the scallions cook for 30 seconds and incorporate well
8. Add the hot pepper and mix well
9. Add fish seasoning, black pepper, all purpose seasoning, , (seasoned sat and sea salt to taste) and mix well.
10. Add the smoked herring, make sure that it is well incorporated with the vegetables
11. Coat the smoked herring with the remainder of the oil. Mix to incorporate
12. Lastly add the tomatoes and mix well.
Serve and Enjoy!
Dumpling Recipe:
2 Cups all purpose flour
1 tsp salt
3/4 Cup water
2 liters of water (for boiling)
Method: In a large bowl add the flour, salt and water. Kneed till you have a firm but soft dough. Cut the finished dough into four sections and roll each section into a ball. Using a rolling pin, roll out each section to your desired thickness and cut with a cookie cutter or glass. After this is done place the water for boiling into a pot on medium heat, when the water comes to a boil add the dumplings to the water. The dumplings will start floating indicating that it is ready, Drain and serve.
