Perfect soup for a fall or winter day!
1 lb of Italian Sausage
1/2 red onion, chopped
4 cloves of garlic, minced
1/4 cup white wine
1 small head of cauliflower, cut into bite sized pieces
3-4 new potatoes, cut into bite sized pieces
1 bunch of kale, chopped
6 cups chicken broth
1 tsp red pepper flakes
1 tsp Italian seasoning
Salt and Pepper to taste
1 cup heavy cream
On medium high heat put a couple tbsp olive oil in a pot, brown sausage. Add onion and garlic, cook additional 5 min, stirring frequently.
Deglaze with wine. Add potatoes and cauliflower, stir frequently for 5 min. Add kale and chicken broth, red pepper flakes and Italian seasoning. Stir all in. Cook on medium heat with lid on stirring occasionally for 15 minutes.
Remove lid, add salt and pepper to taste cook with lid off for another 5 minutes or until potatoes are fork tender. Turn heat to low add cream and cook 5 more minutes.
Serve as is or with grated parmigiana.
Serve with an Australian Riesling
