Andu Aloo Kosha is a very Popular Bengali recipe. In this video we are going to share with you my style of making this recipe which is very simple and requires a lot lesser ingredients than the original. So do try this style.

Serves 6
Ingredients:-
For Egg fry marinade:-
Eggs- 6 Boiled
Red chilli Powder - 1/2 tablespoon
Turmeric Powder - 1/2 tablespoon
Salt - 1/2 tablespoon
For gravy:-
Onions - 3
Tomato - 2
Red Chilli powder - 2 tablespoon
Coriander powder - 2 tablespoon
Turmeric powder - 1 tablespoon
Salt - 1 tablespoon
Tomato Ketchup - 2 tablespoon (Optional)
Ginger Garlic Paste - 3 tablespoon
Cumin Seeds - 1 tablespoon
Other Ingredients:-
Potato - 6
Cooking Oil
Coriander leaves - half a cup
Method of Preparation:-
*First we start with pricking 6 Boiled eggs with a fork. Pricking the eggs will make sure that your masale goes inside the eggs. As soon as you finish with pricking the eggs sprinkle and add half teaspoon Red Chilli powder, half teaspoon Turmeric powder, Half teaspoon Salt. Once done mix everything and keep aside.
*Now in a Kadhai heat some oil. Take some extra oil as we have to fry the Potatoes and Eggs. Once the oil is heated Add 6 potatoes cutted in halfs and fry them untill nice brown. Once done take them out on a plate. And Fry the Eggs in the same way.
Secondly Take out more than half of the oil from the Kadhai. Once done Add A teaspoon of Cumin Seeds, 3 Medium sized Finely Sliced Onion and fry them untill Golden brown.
When the onions are properly fried Add 2 finely chopped Tomatoes, 3 tablespoon of Ginger Garlic paste. Mix well and fry them untill Tomatoes softens.
Next make the Masale paste for that add 1 tablespoon Turmeric powder, 2 tablespoon Red Chilli powder, 2 tablespoon Coriander powder and some water in a small bowl mix everything.
Once our tomatoes are nice and soft add the prepared masale paste. Add some water too so that the masale don't burn. Now mix everything again and let everything get roasted on a high flame.
As and when the Gravy isroasted properly add 2 Tablespoon of Tomato ketchup. Adding Tomato ketchup to the gravy is totally optional if you don't have it don't add it. Mix everything drastically.
*Now add the Fried Potatoes. Mix it with the gravy and add a tablespoon of Salt. Again mix and cover and cook the potatoes for approximately 15 mins.
After 15 mins our potatoes are nicely cooked. Cooking time can depend on the Kadhai you use so keep checking in between. Now Add the Fried Eggs And half a cup of Coriander leaves. Mix everything and cover and cook it for another 2 mins.
After 2 mins our Anda Aloo Kosha is ready to serve. If you wish you can add the Garam Masale too.
