On this episode of Keeping it Real Kitchen, we make a succulent Squash Casserole!
INGREDIENTS
Yellow Squash
White Onions
Unsalted Butter
Eggs
Ritz Crackers
Grated Extra Sharp Cheddar Cheese
Grated Medium Cheddar Cheese
Whole Milk
Salt
Black Pepper
Garlic Powder
Onion Powder
Paprika
DIRECTIONS
Wash the squash then cut into half-inch slices then quarter the slices.
Boil or steam the squash until tender and let cool.
Crack the eggs in a separate bowl and beat them thoroughly.
Take some of the cooled, squash, melted butter, seasonings, cracked eggs, milk, and mix well. Repeat the process until all of the squash is mixed.
Crumble the crackers then add them and the grated cheese into the squash casserole mixture and mix well. If the mix becomes too dry or dense, add a bit of milk to dampen the mix.
Layer the baking pan with the crackers and then add a layer of casserole mix on top of the mix. Then add a layer of cheese and repeat until the pan is full making sure the last layer consists of the casserole mix. Add crackers to the side of the pan and on top of the casserole.
Preheat the oven 350 degrees. and cook for about an hour or until a thermometer inserted into the casserole reads 160 degrees Fahrenheit.
Let cool, refrigerate overnight to allow the ingredients to settle, reheat, and enjoy!
