Ingredients:
• 2 cups Water
• 1 ½ cups Chickpeas, boiled
• 1 chicken stock cube
• 1/2 tbsp sugar
• 1 tsp salt
• 1/2 tsp red chili powder
• 1/2 tsp crushed red chili
• 1/2 tsp turmeric (haldi)
• 1 tbsp ketchup
• 2 tbsp tamarind pulp (imlee pulp)
• 3 tbsp corn flour
• 1 boiled potato, cubed
• 1 onion, chopped
• 1/2 bunch coriander leaves, chopped
• 1 tomato, chopped
• For Garnish:
• Chopped Onion
• Chopped Tomato
• Cubed boiled Potato
• Chopped Fresh Coriander leaves
• Papri
• Fried Onion
• Green Chutney
• Chaat Masala
Instructions:
1. In a pot, bring 2 cups of water to a boil.
2. Add the boiled chickpeas to the boiling water.
3. Crumble the chicken stock cube and add it to the pot.
4. Stir in sugar, salt, red chili powder, crushed red chili, turmeric, ketchup, and tamarind pulp. Mix well to combine all the spices.
5. In a small bowl, mix the corn flour with a little water to make a paste.
6. Gradually pour the corn flour paste into the pot while stirring continuously to avoid any lumps from forming. Cook until the mixture thickens slightly.
7. Add the cubed boiled potato, chopped onion, chopped coriander leaves, and chopped tomato to the pot. Mix well to incorporate all the ingredients.
8. Allow the mixture to simmer for a few more minutes until all the flavors meld together and the vegetables are heated through.
9. Once done, remove the pot from heat.
10. To serve, ladle the Kathiawari Cholay into serving bowls.
11. Garnish with chopped onion, chopped tomato, cubed boiled potato, chopped fresh coriander leaves, papri, fried onion, a dollop of green chutney, and a sprinkle of chaat masala.
12. Serve the Kathiawari Cholay hot and fresh.
