Vegan Pumpkin Pie - 3 WAYS!

This video shows how to make vegan pumpkin pie 3 ways. All of the pies are very easy and use very few ingredient. Happy Thanksgiving!
Walnut Oat Crust
Ingredients-
2 cups raw walnuts (I like to use the chopped ones, it makes it easier)
1 cup rolled oats
1/2 cup maple syrup
1/2 tbsp pumpkin pie spice mix
Blend in food processor or high speed blender
Flour pie crust
3 cups flour (I used oat, but you could use any kind)
1/2 cup sugar
1/2 tsp salt
1/2 cup coconut oil (melted) or any oil or vegan butter
1/3 cup non-dairy milk
Add dry ingredients to a large bowl, stir. Then add wet to middle and mix. Form a ball with your hands. Then make a pie crust shape into a pie pan.
Poke fork holes and bake for 15 minutes at 350 degrees f.
Cashew Pumpkin filling
1 can pumpkin puree (2 cups)
1 cup raw cashews
1/2 cup maple syrup
1/3 cup non-dairy milk
1/2 tbsp pumpkin pie spice mix
soak cashews for 3-6 hours. Drain. Then put all ingredients into a high speed blender.
Add to pie crust and either put it in the refrigerator and don't bake it, or bake it for approximately 1/2 hour. Let cool. Put in fridge for at least a few hours, the longer the better.
Tofu Pumpkin filling
1 can pumpkin puree (2 cups)
1 package of silken tofu (I'm sure you could use any tofu)
1/2 cup maple syrup
1/3 cup non-dairy milk
1/2 tbsp pumpkin pie spice mix
blend and add to crust. Bake for approximately 45-55 minutes. Let cool. Put in refrigerator for at least a few hours.
Standard pumpkin filling (2 versions)
First version-
1 can pumpkin puree (2 cups)
2 tbsp ground flax seeds
1/2 cup- 1 cup brown sugar (depending how sweet you like it)
1/2 cup full fat coconut milk
1/2 tbsp pumpkin pie spice mix
second version-
1 can pumpkin puree (2 cups)
2 tbsp ground flax seed meal
1/2 cup maple syrup
1/3 cup full fat coconut cream
1/2 tbsp pumpkin pie spice mix
add 4 tbsp of water to flax seed meal and let sit for around 10 minutes
add all ingredients to a bowl, mix, add to pie crust. Bake for approximately 1 hour. Let cool. Refrigerate for at least a few hours. The longer the better. Needs time to firm up.
*You could sub out maple syrup for sugar in these fillings.
*You could use any oil or butter instead of coconut oil.
*You can always make your own pumpkin puree, using pumpkin or butternut squash, if you're not lazy, like myself.
*I used 1/2 tbsp of pumpkin pie spice mix in these pies, but you could use up to 1 whole tbsp, if you like a lot of that flavor.
*You could use cinnamon, nutmeg, cloves, and ginger instead of pumpkin pie spice mix. About 2-3 tsp cinnamon, and 1/2 tsp of the others.
