BAUMSTAMM RECIPE:
Ingredients for the sponge
4 eggs
200g sugar (we only used 150g as we always use less)
4 tablespoons of water
250g flour
baking powder
Ingredients for the filling
200g ground hazelnuts
60g butter
1 sachet chocolate pudding (prepare according the packet)
2 tablespoons of cocoa powder
about 60g sugar
Ingredients for the butter cream
1 sachet of chocolate pudding
80g sugar (we used less but it depends on how sweet you like it)
400ml milk
250g soft butter
Method
Preheat the oven to 200 degrees Celsius. For the sponge beat the eggs with the sugar and water and beat until creamy. Add the flour and baking powder and beat again. Take a baking tray and spread the batter onto it and bake for 8-10 minutes. While it's baking prepare a kitchen towel with a bit of sugar on it. After baking take the sponge and put it onto the kitchen towel straight away and roll it while it's still hot so it memorises the shape. Leave until cool.
Now make the filling mixing all the ingredients mentioned above. The pudding needs to be cold so it's best to prepare it the day before. Take your cold sponge roll it out again, add the filling bit by bit and roll it back again.
Now it's time to make the butter cream. Beat the soft butter for about 10 minutes and then add the cold pudding (it's best to prepare it the day before) bit by bit. Put some butter cream aside for the piping. Put the cake into the fridge for about 30 minutes together with the rest of the butter cream before you continue. Spread butter cream on the cake and then take a comb to create a 'trunk look'. Then add some piping on top of the cake to make it look old-fashioned. It's best to cool a bit afterwards before you can hopefully enjoy it to the fullest!
EASTER BISCUITS RECIPE:
Ingredients
350g flour
baking powder
80g powdered sugar
pinch of salt
220g butter
1 egg mixed with a splash of vanilla extract
Method
Mix the flour, baking powder and pinch of salt. Take your soft butter and beat with the powdered sugar for about 2-3 minutes. Add the egg with the vanilla extract and beat again. And gradually add the flour mixture. Kneat until you have a lovely dough, divide it and add food colouring. Let the dough rest in the fridge for about 30 minutes. Then take your biscuit moulds and fill in the dough. Put the moulds into the freezer for about 2 minutes before creating the biscuits. Preheat the oven to 175 degrees Celcius and bake and bake for about 8-10 minutes.
