Making a cloth Christmas pudding. Judy was handing over the making of the pudding to me (Stephen) as it was her grandmother's grandmother's recipe and Judy was dying of cancer. She died 5 weeks after this video.
Recipe:
Grandma Hunt's Christmas Pudding from her Grandma (transcribed 1978)
Cooking time: 5 (lighter) to 6 (darker) hours + 1 hour on day of use
Ingredients:
8 ozs butter
8 ozs brown suger
6 eggs
8 ozs soft breadcrumbs
8 ozs plain flour
pinch salt
1/4 tsp all spice
1/4 tsp nutmeg
Fruit:
10 ozs seeded raisins
10 ozs currents
10 ozs sultanas
2 ozs almonds
4 ozs mixed peel
4 ozs glace cherries
1/3 lid of lemon essence
1/2 cup brandy
1/2 cup marsala
1/2 cup sherry
optional : silver coins and 1 button
Method:
1. Start a big pot of water boiling and place pudding cloth in water to sterilize
2. wash and completely dry fruit (only necessary if fruit dusty)
3. Soak fruit in a basin with spirits overnight (longer OK)
4. Beat butter and sugar
5. Add eggs one at a time
6. Add flour and breadrumbs and mix well
7. Add soaked fruit and mix well
8. Mix all well together
Video Instructions:
9. Flour cloth well with flour sifter
10. Add mixure to cloth
11. Pleat cloth and tie firmly with striong string below your hand
12. Place pudding in boiling water, keep water boiling and pudding covered with water. Boil 5 to 6 hours.
13. Place pudding in coandre to cool
14. When cold hang in air until day of use.
15. Boil in water for 1 hour on day.
