winter soup recipes you NEED in 2024 (plant-based/vegan)

It's soup season baby! Let's make 3 of my current favourite vegan soup recipes!

Gnocchi Meatball:
1 tbsp oil
1/2 onion, diced
1 carrot, diced
3 cloves garlic
10-15 frozen meatballs
1 can diced tomatoes, pureed (or not, if you like it chunky)
3 cups veggie broth
1 can lite coconut milk
1 1/2 cups gnocchi
1 tsp each dried basil, oregano
1 tsp smoked paprika
1/2 tsp garlic powder
Chilli flakes to taste (I did 1/2 tsp)
Salt and pepper to taste
Handful of kale, chopped
1 tbsp finely chopped fresh basil, optional

Congee: I used this recipe https://vm.tiktok.com/ZM64fHBYM/ and subbed 1/2 cup soy curls for chicken, and used vegan chicken broth.

Sausage & White Bean Stew:
1 tbsp oil
1/2 cup onion, diced
1/4 cup green onion, diced
1 carrot, diced
3 cloves garlic
2 vegan sausages, chopped
1 can diced tomatoes, pureed (or not, if you like it chunky)
4 cups veggie broth
2 tbsp dairy-free red pesto
1/2 can white beans
2 tbsp nutritional yeast
1/2 tsp garlic powder
1 tsp dried basil
1 cup chopped kale
1 tbsp finely chopped fresh parsley
