Recipe:
4 chicken thighs
3 tbs EVOO
1 cup flour
2 cloves garlic (sliced)
1 sprig rosemary
1 cup dry red wine
1 cup chicken stock
1/2 cup balsamic
2 tbs butter
Salt and pepper to taste
Preheat oven to 425. In a large pan get oil to smoke point. Season flour with salt and pepper and dredge chicken thighs. Brown chicken thighs on both sides about 3 minutes each side. Remove chicken and sauté garlic when garlic begins to brown add rosemary, wine, and stock. Add chicken back to pan and place in oven for 20 minutes. Remove pan from oven remove chicken from pan, add balsamic to pan and simmer until liquid begins to thicken. Place chicken back in pan and serve.
