Winter Special Thali | Traditional Indian Comfort Food for Cold Season
Winter is the season of warm, nourishing and soulful भोजन, and this Winter Special Thali is a perfect celebration of traditional Indian flavours that keep the body warm and healthy.
🌿 Recipe 1: Lila Chana Nu Shaak (For Sabzi / Gravy)
📌 Ingredients – Masala Paste
Oil (Tel / तेल) – 2–3 tbsp
Big Green Chillies (हरी मिर्च) – 6–7
Fresh Turmeric (Kachchi Haldi / कच्ची हल्दी) – 1 piece
Fresh Ambu Haldi (अम्बू हल्दी) – 2 inch
Fresh Coriander (हरा धनिया) – 100 g
Whole Coriander Seeds (साबुत धनिया) – 1 tbsp
Cumin Seeds (Jeera / जीरा) – 1 tsp
Green Garlic (हरा लहसुन) – 50 g
Peanuts (मूंगफली) – 4–5 tbsp
Onion (प्याज़) – 2 small
Roasted Chana Dal (भुना चना दाल) – 1–2 tbsp
Salt (नमक) – To taste
1 Pinch of Sugar (चीनी)
Gravy
Oil (तेल) – 2–3 tbsp
Ginger Garlic Paste (अदरक-लहसुन पेस्ट) – 1 tbsp
Boiled Green Chana (हरा चना, उबला हुआ) – 250 g
Water (पानी) – As required
Spring Onion (हरा प्याज़) – Few
White Butter (सफेद मक्खन) – 1–2 tbsp
Kitchen King Masala (किचन किंग मसाला) – 1 tsp
Recipe 2 : Ravaiya Pulav
📌 Ingredients – Green Masala Paste
Fresh Coriander Leaves (Hara Dhaniya / हरा धनिया) – 2 cups
Green Garlic (Hara Lehsun / हरा लहसुन) – 1 cup
Green Chilli Paste (Hari Mirch Paste / हरी मिर्च पेस्ट) – 1 tbsp
Red Chilli Paste (Lal Mirch Paste / लाल मिर्च पेस्ट) – 1 tbsp
Sesame Seeds (Til / तिल) – 2 tbsp
Grated coconut ( नारियल बुरादा) – 2 tbsp
Turmeric Powder (Haldi Powder / हल्दी पाउडर) – ½ tsp
Oil (Tel / तेल) – 1 tbsp
Salt (Namak / नमक) – To taste
Sugar (Cheeni / चीनी) – 1 pinch
Masala Tadka (For Pulao):
📌 Ingredients – Pulav
Ghee (घी) – 2-3 Tbsp
Tej Patta - 1 Nos
Star Anise - 2 Nos
Black Cardamom - 1 Nos
Small Cinnamon Stick - 1 Nos
Mace (Javantri) - 1 Nos
Green Garlic (Hara Lehsun / हरा लहसुन, chopped) – ½ cup
Fresh Coriander Leaves (Hara Dhaniya / हरा धनिया) – ½ cup
Spring Onion (Hara Pyaz / हरा प्याज़) – ½ cup
Red Chilli Powder (Lal Mirch Powder / लाल मिर्च पाउडर) – ¼ tbsp
Salt (Namak / नमक) – To taste
Recipe 3: Gujarati Kadhi
📌 Ingredients – Kadhi
Curd (Dahi / दही) – 1 cup
Gram Flour (Besan / बेसन) – 2 tbsp
Green Chilli Paste (Hari Mirch Paste / हरी मिर्च पेस्ट) – 1 tsp
Fresh Turmeric (Kachchi Haldi / कच्ची हल्दी) – 2 inch
Water (Paani / पानी) – 2 cups
Salt (नमक) – To taste
📌 Ingredients – Tempering (Tadka)
Ghee (घी) – 1 tbsp
Cloves - 2 Nos
Cinemon Stick - 1 Nos
Dried Red Chilie - 2-3 Nos
Cumin Seeds (Jeera / जीरा) – ½ tsp
Mustard Seeds (Rai / राई) – ¼ tsp
Asafoetida (Hing / हींग) – ¼ tsp
Curry Leaves (Kadi Patta / कड़ी पत्ता) – Few
Fresh Coriander (Hara Dhaniya / हरा धनिया) – For garnish
Recipe 4: Bajra Rotla (Masala Bajri Rotla)
📌 Ingredients – Bajra Khichdi
Pearl Millet (Bajra / बाजरी) – 2 cups
Wheat Flour (Gehun ka Aata / गेहूं का आटा) – ½ cup
Salt (Namak / नमक) – ¼ tsp
Sesame Oil (Til ka Tel / तिल का तेल) – 1 tbsp
Warm Water (Garam Paani / गर्म पानी) – ¾ cup
📌 Ingredients – Masala Tadka (Masala Bajri Rotla)
Ghee (घी) – 4–5 tbsp
Green Garlic (Hara Lehsun / हरा लहसुन, chopped) – ½ cup
Fresh Coriander (Hara Dhaniya / हरा धनिया) – ½ cup
Spring Onion (Hara Pyaz / हरा प्याज़) – ¼ cup
Salt (नमक) – To taste
Red Chilli Powder (Lal Mirch Powder / लाल मिर्च पाउडर) – 1 tsp

📌 Ingredients – Instant Achar
Radish (Mooli / मूली) – 1
Carrot (Gajar / गाजर) – 1
Big Green Chillies (Badi Hari Mirch / बड़ी हरी मिर्च) – 4–5
Yellow Mustard Paste (Peeli Sarson / पीली सरसों) – 1 tsp
Mustard Seeds (Rai / राई) – 1 tsp
Mustard Oil (Sarson ka Tel / सरसों का तेल) – 1 tbsp
Dry Coriander Powder (Sukha Dhaniya / सूखा धनिया) – 1 tbsp
Peanut Oil (Moongfali ka Tel / मूंगफली तेल) – 1–2 tbsp
Amchur Powder (Aamchur / आमचूर) – To taste
Salt (नमक) – To taste
