Every First in September, there will be a playlist of all sort of fall recipes & inspiration to help you gather some delicious recipes to use during this fall season!
I decided to make my very favorite recipe using zucchini.
This recipe is to die for, I promise you.
You will want to give this one a try ... & the homemade caramel icing takes it over the top!
It's easy, using only a few ingredients & is so moist & delicious.
I also show you a beautiful charcuterie board that would be perfect for fall, along with a few ideas for preparing & setting up an assortment of snacks for having over a few friends.

Old Fashioned Zucchini Cake
1 cup vegetable oil
2 cups granulated sugar
2 large eggs
1/2 cup buttermilk
2 tsp vanilla extract
1 1/2 tsp cinnamon
2 cups all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups lightly packed shredded zucchini
1 cup finely chopped walnuts
Preheat oven to 350F Spray a 9x13 pan with cooking spray.
In a large mixing bowl whisk together the oil, sugar, eggs, buttermilk, vanilla, and cinnamon until smooth.
Toss together the flour, baking soda, baking powder, and salt, and add the bowl. Mix just until completely blended. Fold in the zucchini and the nuts.
Pour batter into prepared pan and bake for about 35-40 minutes, or until a toothpick comes out without clean.
Let the cake cool completely before frosting.
**I use self-rising flour & I have also used regular milk when I didn't have buttermilk.
Homemade Caramel Frosting
2 tablespoons butter
3 tablespoons milk
½ cup packed brown sugar
1 cup confectioners' sugar
½ teaspoon vanilla extract
In a saucepan over medium heat, melt the butter & mix in 3 tablespoons milk & brown sugar. Boil vigorously for 1 minute.
Remove from heat & beat in 1/2 cup confectioners' sugar.
Cool slightly & beat in the vanilla & remaining 1/2 cup confectioners sugar. Add more milk if the mixture is too thick or confectioners sugar to thicken it up.
