Hello Everyone! Welcome back to Bapamas Kitchen! Today, we'll learn how to make Tingalavre & Vaale Koddel, a traditional and comforting stew made during the jackfruit season in Amchigele (Konkani) households.
This simple recipe features white beans (Tingalavre) and Malabar spinach (Vaale) in a spicy & flavorful coconut gravy. We've used potato in this version, which is a great substitute for the traditional jackfruit seeds (Bikkand).
INGREDIENTS:
100 Grams Tingalavro (Navy Beans), soaked overnight
200 Grams Malabar Spinach
5-6 Bikkand (Can be substituted with Potato)
Salt to taste
FOR MASALA:
1/4 Coconut (Grated)
12 Dried Red Chillies (Ramnaad Variety), Roasted
1/2 Marble Sized ball of Tamarind
FOR TEMPERING:
12 Pods of Garlic
1.5 Tablespoons Coconut Oil
