WRITTEN RECIPE
INGREDIENTS
Buttermilk Chicken Nuggets
Marinade
1 lb boneless, skinless chicken breast, cubed
1 cup buttermilk
1 large egg
1 tbsp salt
1 tbsp black pepper
Flour Coating
1 cup all purpose flour
1 tbsp seasoned salt (regular salt also works)
1 tbsp black pepper
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried oregano
2 tsp cayenne pepper
Karaage, Japanese Fried Chicken
Marinade
1 lb boneless chicken thighs, cut into 1 inch pieces
2 tbsp soy sauce
2 tbsp mirin
1 tsp black pepper
3 garlic cloves, roughly chopped
1 inch ginger piece, sliced or chopped
Flour Coating
Potato Starch
Use preferred oil for deep frying (I used canola)
DIRECTIONS
Buttermilk Chicken Nuggets
In a bowl, combine buttermilk, egg, salt, and black pepper. Whisk to combine
Add chicken breast and toss to ensure all chicken is fully covered
Cover the bowl tightly and leave in fridge overnight
Next day, preheat a pot of oil to 325 degrees Fahrenheit
In a bowl combine flour, salt, black pepper, garlic powder, onion powder, paprika, oregano, and cayenne pepper. Whisk to combine
Toss marinated chicken in flour mixture
Deep fry in oil for 5-6 minutes. Do this in batches so the temperature of oil does not drop drastically
Allow cooked chicken to sit on paper towels or wire rack to let excess oil drip off
Karaage, Japanese Fried Chicken
In a bowl, combine soy sauce, mirin, black pepper, garlic, and ginger
Add chicken thighs and toss to fully coat in marinade
Cover bowl tightly and leave in fridge for at least couple hours. Overnight is ok
Preheat a pot of oil to 325 degrees Fahrenheit
In a bowl, add potato starch
Toss marinated chicken in potato starch to fully coat then deep fry for 2 minutes. Do this in batches so the temperature of oil does not drop drastically
Remove and place on paper towels or wire rack to let excess oil drip off
Once all chicken has been fried once, bring oil temperature up to 350 degrees Fahrenheit
Deep fry chicken, in batches, for a 2nd time for 1 minute
Remove and place on paper towels or wire rack to let excess oil drip off
