Caramel Apple Cheesecake
Ingredients:
Crust
2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
1/2 tsp cinnamon
Cheesecake Filling
16oz softened cream cheese
1/2 cup granulated sugar
2 large eggs- room temp
1 tsp vanilla extract
Apple Topping
3 apples (i used granny smiths) - peeled and diced
2 tbsp lemon juice
1/4 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
Streusel Topping
1/2 cup all purpose flour
1/4 cup brown sugar
1/4 cup cold butter, cubed
1/4 cup chopped pecans
Caramel Sauce
1 cup granulated sugar
1/4 cup water
1/2 cup heavy cream
2 tbsp butter
1/2 tsp salt
Directions:
Crust
preheat oven to 350 degrees
mix graham cracker crumbs, melted butter, granulated sugar and cinnamon until combined
pour mixture into 9x13 baking pan
spread crust and press into the bottom, making sure it is even
bake crust for 10 minutes and let cool while assembling other layers
Cheesecake Filling
beat cream cheese and sugar until smooth
add in eggs one at a time and vanilla extract
once crust is cooled, pour cream cheese mixture over crust and evenly spread
Apple Topping
peel and dice 3 apples
toss diced apples with lemon juice, brown sugar, cinnamon and nutmeg
spread over cream cheese mixture
Streusel Topping
mix flour and brown sugar
cut in cold butter until it becomes crumbly
stir in chopped pecans
sprinkle over apples
** once all layers are assembled, bake 45-50 minutes or when streusel is golden
** allow cheesecake to fully cool before serving
Caramel Sauce
over medium heat add water and sugar until sugar starts to dissolve
increase heat to medium/high and bring to boil without stirring until it turns amber in color (7-10 min)
remove from heat
stir in butter and heavy cream
