Shortcut version of Korean rice porridge, jook, or congee recipe ⬇️
(2-3 servings)
2 cups cooked rice (I used purple rice which is white n black rice)
3 cups chicken stock or broth
1/4 of an onion
1 tbsp minced garlic
1 tbsp minced ginger
2 tsp fish sauce (add salt if needed)
Veggies: I like to use shiitake mushrooms and shredded carrots
1. Drizzle cooking oil onto a pot. Sauté onions until slightly translucent
2. Add garlic and sauté for 3 mins
3. Add ginger and chopped mushrooms
4. Pour chicken broth and fish sauce
5. Bring it to a boil and lower heat to simmer for 15-20 minutes. Or until it becomes porridge consistency
